Changing it up

Taking care of a family can sometimes be a little, well... overwhelming. We get caught up with doing ten things at once we forget about ourselves and spending time with each other. Emil works 13 hour days and I'm home going back and forth with Ender and work (he's actually taking a nap as we speak!). So when it comes to eating we usually go with whatever is fast and gets the job done. But since summer started we've been getting the itch to get back into shape and redeem our health! So one thing we've been doing is cooking more healthier meals at home. So many benefits to this!

1. We're spending less money
2. We're spending more quality time together
3. We're getting healthy


For starters we made one of our favorite pizzas: Arugula with prosciutto and mozzarella. To save time we bought pre-made dough (only $1.29) and pizza sauce (only $1.99) from Trader Joe's. The rest was super easy. All we had to do was cut the mozzarella cheese and toss some arugula on top. This entire meal was simple, affordable, and delicious! 



For us, cooking together is one of the best times to catch up and relax. Yeah it may take a few extra hours out of our day but it's so worth it.
